Meet The Team

James Hill

James Hill is a passionate and experienced chef with a career that began at the 3 Rosette Rampsbeck Hotel on Ullswater. He went on to work under Angela Hartnett at the Michelin-starred Connaught Hotel in London, gaining valuable experience in high-end kitchens.

He then spent two years as Senior Chef at Thorpe Park Hotel in Leeds, the flagship of the Shire Hotel Group, before returning to Cumbria to open Lounge on the Green. Under his leadership, the restaurant earned 2 AA Rosettes, was featured in the Michelin Guide, and received high praise in The Good Food Guide.

Over the last decade, James has also launched several successful food concepts in Carlisle, including the city’s first sushi and Japanese restaurant, Oka, and its first gourmet burger bar, Quarter Lounge.

In October 2024, James took a bold new step, moving to Curthwaite, west of Carlisle, to open The Oak at Curthwaite, a fresh challenge and a new chapter in his career.

Earlier in his journey, James was part of the winning Carlisle College team in the 2004 Nestlé Toque d’Or competition, having also competed in 2002. Most recently, in 2025, he represented the North West on BBC Two’s Great British Menu

 

Jovita Thompson

Jovita joined James at Lounge On The Green in 2017 as Assistant Manager and, within a year, was leading the front-of-house operations. With a strong background in hotel hospitality, including restaurant service, function management, and housekeeping she brings a wealth of experience to the team. 

Jovita has also completed her WSET Level 2 in Wines, further deepening her expertise in the industry

 

Dan Lakin

Dan has been a valued member of James’s team since 2017 and is now a key part of the kitchen brigade. With over 15 years of experience across a range of kitchens, from street food to 3 AA Rosette establishments. 

Dan brings both versatility and creativity to his role. He oversees the kitchen team and leads innovation in the cold and pastry sections, contributing significantly to the restaurant’s culinary direction.

 

Chloe Hunt

Chloe joined the team in May this year as Junior Manager, quickly stepping up to support and learn alongside Jovita. At just 19, she already brings two years of experience from fast-paced dining environments. Eager to grow in the industry, Chloe will begin her WSET wine education journey later this year.
